Abstract

Cut papaya fruit was an example of cut fruit sold in supermarkets. Cut papaya fruit easily declined in quality, so indicators were needed that could detect the freshness of cut papaya fruit. Red cabbage as a plant source with natural pigments, namely anthocyanin, can be applied as a natural indicator because it can change color in response to changes in pH. The red cabbage indicator first underwent optimization of the binding material and immobilization time to provide accurate detection results. The red cabbage indicator was prepared by immobilizing Whatmann filter paper on red cabbage extract. The immobilized indicators were aired and then the mean blue value was measured using ImageJ. The optimum concentration of bound material (PVA) was 1%, and the optimum immobilization time was 10 minutes.
